The smaller the crystal, the smoother and creamier the honey.
Creamed honey has a smooth, sumptuous texture that is a delight in the mouth or to smooth onto toast whilst still retaining all the goodness of our native raw honey. Nothing is added to creamed honey. The flavor is the same as the liquid native bush honey. It is just the texture that is different.
Be warned though, once you try it you will want more of the irresistible silky smoothness. The small crystals prevent the formation of larger crystals that occurs in naturally granulated honey. This is the same raw honey which is gently stirred to control the size of the crystals that form to create a smooth granulation.
Creamed honey can be refrigerated with a tight-fitting lid if you prefer it to be firm, otherwise leave it at room temperature.
